One of the major benefits and unique points of Backwods cookers is that they are all upright water cookers. This makes it a lot easier to load and unload your meat. The other benefit is that whilst the smoker is drying the meat, the smoker is also adding moisture back in, to produce a fantastic juicy piece of meat.
